We are back with this exciting recipe that will teach you how to make potstickers as you might find at restaurants like TGI Fridays. These Chinese dumplings are made with ground pork, ginger, cabbage, soy, and several other ingredients.
We just finished celebrating the Thanksgiving holiday season. If you’re like me, eating leftover Thanksgiving dinner last for several days. After stuffing ourselves, we are ready for something else.
Chinese food sounded like a refreshing change of pace. We decided to make potstickers. I have always loved the potsticker appetizers from TGI Fridays. Our potstickers are made with pork but you can use beef or chicken too.
HOMEMADE POTSTICKER RECIPE
We decided to make our own dumpling wrappers, but you can buy store bought wonton wrappers if you want to speed up the process.
We also made our own dipping sauce that consists of Thai fish sauce, Asian chili sauce, soy, ginger, and sesame oil.
HOW TO MAKE POTSTICKERS
The first step in making delicious potstickers is the dumpling wrappers. For this recipe, we are using a basic dough recipe that uses, flour, salt, and water.
Combine the ingredients in a mixer. Scrape the sides of the bowl to ensure that all the ingredients mix together.
KNEADING THE POTSTICKER DOUGH
Once the dough forms into a ball, remove from the mixer and continue to knead the dough on a flat surface covered in flour. Kneading the dough will ensure that your dough doesn’t clump and is evenly mixed.
Form the dough back into a ball, put into a bowl or container, and cover with a towel. Set aside for at least 10 minutes.
Add a 1/2 pound of ground pork, beef, or chicken into a medium skillet over medium-high heat and brown the meat. Drain the excess fat in a strainer and set aside.
Combine Asian salad mix, ground pork and the remainder of the potsticker filling ingredients into a bowl and mix evenly. If you cannot find an Asian salad mix, you can use equal parts cabbage, carrots, and chives.
Cover the bowl with plastic and set aside.
COMPLETING THE POTSTICKER DUMPLINGS
Place the previously made dough on a flat clean surface with a dusting of flour. Cut the dough ball in half and flatten with a rolling pin. Try to make the dough as symmetrical as possible. The flattened dough should be roughly the thickness of the average tortilla shell. Use a biscuit cutter or the top of a glass cup to cut out the circles for your potstickers. Once you’ve cut out many circles, you will need to reform the dough and flatten with a rolling pin again. Repeat this process until you’ve used almost off of the dough. You should end you with around 20 to 22 circles in total.
Add approximately a tablespoon of filling to the center of your dumpling circle. Fold the dumpling in half around the filling a crimp the edges to seal the dough around the potsticker. Set on a plate and repeat the process for all the remaining dumpling circles.
BROWNING THE POTSTICKERS
Lightly grease a large skillet with sesame oil over medium-high heat. Once the skillet is hot, begin laying the Chinese dumplings around the pan in
a single file pattern. Try to leave a little space in between. Work your way inward until all of the potstickers are in the pan or you have run out of room. If you run out of room, simply repeat this process once the first batch is done.
Continue cooking the potstickers until the bottom of the potsticker is a nice brown color. Once the bottoms have browned, add cold water into the pan and cover for an additional 2 to 3 minutes. This will allow the dumplings to steam cook all the way through.
MAKING POTSTICKER DIPPING SAUCE
This is the easiest part of the process if you can find the right ingredients. Most grocery stores do not carry many Asian ingredients. If you are having trouble locating some of them, you may need to purchase them at an Asian store or through Amazon.com.
Simply combine soy, Asian chili sauce, Thai fish sauce, ginger, rice vinegar, sugar, and sesame oil in a small mixing bowl and stir.
FINISHING THE POTSTICKER RECIPE
After steaming the potsticker dumplings, remove them from the pan, place them on a plate, dust them with chives or thinly slices green onion and serve with the delicious potsticker sauce.

How to Make Potstickers | Chinese Dumpling | Potsticker Dipping Sauce
If you’ve ever wanted to learn how to make potstickers like those found at TGI Fridays, you’ve come to the right place.
Simple Chinese dumpling dough
- 2 cups all-purpose flour
- 1 cup boiling water
- 1 tsp salt
Potsticker dipping sauce
- 4 tbsp soy sauce
- 4 tsp Asian chili sauce
- 4 tbsp Thai fish sauce
- 2 tbsp rice vinegar
- 2 tsp sugar
- 2 tsp sesame oil
- 1 tsp ground ginger
Brown the pork in a large skillet over medium-high heat. Strain and set aside.
Combine the rest of the potsticker filling ingredients in a bowl and mix thoroughly. Cover and set aside.
Chinese Dumpling Dough
Combine boiling water, flour, and salt and mix. Scrape the sides to ensure all ingredients are incorporated. Form into a ball.
Remove ball from the mixer and set on a clean surface dusted with flour. Knead the dough thoroughly for several minutes, form back into a ball. Place dough ball back into a bowl and cover for at least 10 minutes.
Filling the Potstickers
Cut dough ball in half and use a rolling pin to flatten into a circle. The dough thickness should be roughly the size of an average tortilla shell.
Use a biscuit cutter or the top of a glass cup to form the potsticker circles. Reform dough and flatten with rolling pin as needed. Keep cutting until all dough is used.
Place a tablespoon of filling into the center of the dumpling.
Fold the dumpling in half around the filling and crimp the edges until the dumpling is completely sealed. Repeat for the remainder of the potstickers.
Browning the Potstickers
Grease a large skillet with sesame oil over medium heat.
Place the potstickers single file around the skillet. Work your way inward until you run out of potstickers.
Cook the potstickers until they are a nice golden brown.
Add a 1/4 cup of cold water into the skillet and cover for an additional 2 to 3 minutes.
Remove the potstickers from the pan and place on a plate. Dust with chives.
Potsticker Dipping Sauce
Combine all of the dipping sauce ingredients from above in a small bowl and stir until thoroughly mixed.
