My first introduction to loaded cheese fries
I was first introduced to loaded cheese fries some time back in the mid-90s. My buddy was the manager of a Ruby Tuesdays Bar and Grill. My wife and I went to visit him at work and he asked us if we wanted something to eat and that he was buying. I asked him what he recommended from the menu. He rightly suggested loaded fries.
Who knew that bacon and french fries could be so good together?
I remember how good they tasted with the ranch dressing dipping sauce and the gooey cheese and bacon. They were perfect for sharing. I also remember how well they paired with an ice cold beer.
How to make loaded fries
I prefer to make my own french fries but if you would like to forgo that step, go with a quality french fry like Ore-Ida.
- Cut 3 of your Russet potatoes in half, long way. Then quarter, eighth… Keep cutting long ways until you get a long french fry shape. The thinner you go, the crispier the fry. Do not go to fat or the consistency/texture will be wrong.
- Place all of your long cut fries in a large container and add of beer. Add additional water to fully submerge the fries.
- Cover and store in the refrigerator for 2 hours.
- In a medium pan, add vegetable oil about a 1/4 of the way up the pan. Set the burner to medium high heat (about 3 o’clock on the dial). Be careful not to set the burner too high or the French fires will cook too quickly or burn. Slow cook for the best results.
- Set the oven to bake at 425 degrees.
- Keep cooking the fries until they get a nice tan color. Remove and place on a dish covered with a paper towel.
- Repeat cooking the fries until all are cooked.
- Season and place in a casserole dish.
- Cover the French fries with Cheese dip, mozzarella, and bacon and bake for 8 minutes.
- Add chives to your loaded fry masterpiece and serve with ranch dressing dipping sauce.

Deep frying the french fries
- vegetable oil enough to submerge the fries
Spice for French Fries
- 1 tsp Smoked paprika
- 1 tbsp Onion powder
- 1 tbsp Garlic powder
- 2 tsp Seasoned salt
- 1 cup Cheese Whiz
- 2 cups Mozzarella cheese
- 4 strips Cooked bacon
- Ranch Dressing
Preparing the french fries
Cut potatoes long ways in half, in quarters, and in eighths. keep cutting long ways until you get the perfect fry shape. Be careful not to leave to thick.
Add cut fires into a large container and cover with beer and then water until all fries are submerged.
Cover and store in the refrigerator for at least 2 hours before cooking.
Combine all spices for French fries and store for later.
Deep frying the fries
Preheat oven to 425 degrees
Place a media pot on a burner set to medium-high (about 3 o’clock on the dial). The vegetable oil should be a quarter of the way up the pot to ensure all fries are covered. Don’t set the burner to high or the fries will cook too quickly or burn.
French fries will be done when all of the fries have a nice tan color.
Place cooked fries on a plate cover with a paper towel.
Coat the fries with the spice mixture.
Repeat with the remainder of the french fries
Combining all ingredients to assemble your loaded cheese fries
Coat a casserole dish with cooking spray and place the cooked French fries in the dish.
Cover with Cheese Whiz, Mozerella, and bacon.
Place casserole dish in the oven for 8 minutes.
Sprinkle with chives and serve with ranch dressing.
