Lunch Lady No Bake Peanut Butter Bars


If you’re like me, your school cafeteria served up the best no bake peanut butter bars you’ve ever had in your life. What if you could relive those moments and make peanut butter cups that Reese’s would envy? This recipe is inspired by those days.

80s Peanut Butter Bars

Going to school was a lot different back in the 1980s than it is today. Most of the food wasn’t very good but lunch was more about socializing with your friends anyway. The highlight of lunchtime was always the peanut butter bars.

I’ve always been a fan of peanut butter cups

My favorite candy growing up was Reese’s Peanut Butter Cups. I still love them today.

It’s currently October and we are getting ready to celebrate Halloween. Luckily for me, our daughter hates peanut butter so I will get all those delicious peanut butter cups that she will get from the neighbors.

Back in the 80s, our lunch ladies would whip up batches of the best no bake peanut butter bars you’ve ever tasted. The only catch was that they only made them a few times a week. It was truly a random thing but my friends and I always looked forward to those days.

Whenever I think of a lunch lady, I always think of the late comedian Chris Farley and that silly song from Adam Sandler. I’m sure Adam remembers the peanut butter bars his lunch lady made.

Lunch Lady No Bake Peanut Butter Bars

There is nothing better than these homemade peanut butter bars just like the lunch lady used to make. 

Prep Time 15 minutes
Servings 16 people


  • 1 1/2 tbsp molasses
  • 1 cup oats
  • 1 cup peanut butter
  • 3/4 cup butter unsalted
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 12 ounces dark chocolate chips unsweetened


  1. Add molasses, peanut butter, and butter into a microwave-safe dish. Cook until the butter is melted and then stir together. 

  2. Add oats, powdered sugar, and vanilla and hand mix together with a spatula. Form mixture into a ball. 

  3. Place wax paper into a 9 x 13 baking pan. 

  4. Flatten mixture and form an even layer in the baking pan.

  5. Place chocolate in a microwave dish. Microwave in 30-second increments, stirring between each increment until completely melted. 

  6. Spread melted chocolate evenly over the baking dish with a spatula. 

  7. Cover dish and set inside the refrigerator. Once the chocolate has set (about an hour), cut into squares and return to the refrigerator for another hour but preferably overnight.
